Try these pistachio recipes, courtesy of Chef Jim Pacini:
Pistachio Cranberry Granola
Ingredients:
4 cups Steel Cut Oats
1 ½ cups Raw Pistachios
¼ cup Pumpkin Seeds
1 ½ teaspoons Cinnamon
½ teaspoon Sea Salt
½ cup Coconut Oil
½ cup Maple Syrup
1 tablespoon Honey
2 tablespoons Brown Sugar
2 teaspoons Vanilla
1 Egg White
1 cup Craisins
Directions:
Preheat oven to 300 degrees.
Combine the oats, pistachios, pumpkin seeds, cinnamon, and sea salt in a large bowl.
Over medium heat cook the coconut oil, maple syrup, honey, and brown sugar until sugar dissolves and a smooth syrup develops.
Remove from heat and stir in the vanilla.
Pour over the oat mixture and stir to coat evenly.
Whisk the egg white until frothy (soft oats), fold into oat mixture.
Spread evenly onto a parchment lined baking sheet.
Bake 40-50 minutes until desired doneness.
Remove from oven and cool completely.
Break into clusters and add the craisins.
Store in an airtight container.

Pistachio Rub for Pork Tender Loin
Ingredients:
4 cups Pistachios
2 tablespoons Kosher Salt
1 teaspoon Black Pepper
1 teaspoon White Pepper
1 teaspoon Cayenne Pepper
1 teaspoon Ground Coriander
1 teaspoon Ground Garlic
1 teaspoon Ground Onion
½ teaspoon Ground Thyme
Combine all ingredients in a food processor and pulse until desired consistency.
