Exeter business world leader culinary spice


Usually imported from Italy, Fennel Pollen is one of the most exotic and expensive spices — up to fifty dollars an ounce.

Now, a Valley company with expertise gathering pollen for agriculture is sourcing and selling local Fennel Pollen… for a quarter of the price

Some describe the aroma of fennel pollen as licorice-like, but expert Gary Woolley says the taste is different. “It’s the main ingredient in our blends, here, and you don’t even taste the fennel pollen. It really fades to the background and supports the other ingredients… So it’s really unique and that’s why chefs love it.”

Gary Woolly works at Pollen Ranch in Exeter — a business that for many years worked for farms gathering pollen for agricultural purposes. “There’s two sides to our business. There’s an agricultural side. And fennel pollen side was born from the agricultural side.”

Pollen Ranch sells online and at their store in downtown Exeter.

Woolly says, “Now we’re the largest producer in the world of fennel pollen.  And we ship it internationally and all over the world.”
