Pack up a picnic basket & head outside to enjoy the beautiful first weekend of spring. Jenny & Zara share their "semi-homemade" recipes that are perfect for the nice weather. Enjoy! 

Citrus Vinaigrette Recipe -
1 cup (good quality) Extra Virgin Olive Oil
2 tbsp. fresh Lemon Juice
2 tbsp. fresh Orange Juice
1 tsp. Dijon Mustard
1 tsp. Kosher Salt
Tip - Jenny also likes to add Balsamic Vinegar & Garlic powder

Jenny says this goes great over a spring salad that includes fruit. Jenny likes to use baby spinach & some type of green vegetable, either cucumbers or green peppers, plus avocado to stay full, and something crunchy, like sunflower seeds, almonds, or walnuts.

Citrus vinaigrette is also great over baked white fish served on a bed of spinach, topped with fresh fruit tossed in lime juice - easy dinner!

Raspberry Almond Lemonade -
1 quart Lemonade
1/2 cup Almond Syrup (find it with coffee flavorings)
1/2 cup Raspberries (fresh or frozen)
Tip - Jenny adds sparkling water to cut the sweet & add fizz

Put it in a carafe if you're going on a picnic. Make it the morning, so it has some time to mix, but remove any leftover raspberries by the end of the day.

Chicken Salad w/Sage -
Shredded Roasted Chicken
Mayonnaise to coat
Green Grapes - cut in half
Walnuts or Pecans
Fresh Sage - chopped into small pieces
Tip - Zara buys a pre-cooked rotisserie chicken to save time

Zara says the sage makes all the difference, so don't skip it! It's great served on mini croissants for baby showers & brunches. Try it with lettuce or mustard, too.
