Chef Hillori Hansen from Whole Foods Market in Fresno visited CBS47 This Morning to show some grilling tips for the 4th of July.
Grilled Stone Fruit with Greek Yogurt, Honey and Mint
3 nectarines or peaches, halved, pitted
6 apricots, halved, pitted
Coconut oil, melted
2 cups Greek yogurt, room temperature, stirred to soften
¼ - ½ cup honey
½ cup toasted pistachios, chopped
1 bunch mint leaves, chopped
Prepare grill for medium-hot heat. Halve the fruit and remove the pits. Lightly oil the cut side of the fruit. Place cut side down over direct medium-hot heat. Cook until char marks appear, 3-4 minutes. Arrange fruit, cut-side up, on plates. Serve with a spoonful of Greek yogurt. Drizzle yogurt and fruit with honey. Garnish with toasted pistachios and chopped mint.
Grilled Herb-Marinated Kebabs
Serves 6 - 8
1/4 cup olive oil
2 tablespoons red wine vinegar
3 cloves garlic, minced
1 teaspoon smoked or sweet paprika
3 tablespoon fresh chopped herbs (mint, oregano, thyme, parsley or rosemary)
1 teaspoon sea salt
1 teaspoon fresh ground black pepper
1 1/2 pounds boneless skinless chicken breast, lamb or beef, cut into 1-inch cubes (*)
2 medium zucchini, cut into one inch pieces
1 lb. cremini mushrooms, stems removed
1 medium red onion, cut into one inch pieces
2 large bell peppers (red, green or yellow)
6 pita rounds
6 – 8 metal skewers or wooden skewers soaked in water
1. Heat up your grill. In a large bowl, combine the olive oil, red wine vinegar, garlic, paprika, fresh herbs, salt and pepper. Toss the meat and vegetables in the marinade and thread them onto skewers, alternating meat and vegetables. Grill over high heat, rotating to cook on all sides. Transfer to a plate.
2. In a cast iron or non-stick skillet, spray bottom of the pan with cooking spray and heat the pita through on each side until golden, about 4 minutes. Cut into halves or quarters.
3. Serve the kebabs with the pita and some fresh tomatoes, kalamata olives or healthy hummus.
*Note: If you want to do veggie skewers only, double your veggie ingredients or try
Halloumi cheese (a great grilling cheese) for a twist on veggie kebabs.
